As an enterprising caterer, we at Vitam work every day on vital people in a vital world. With tasty food and drink, we entice people to make responsible and vital choices every day. The world around us is changing and offers great challenges. This really calls for major adjustments in our own behavior. Circularity is a very important theme of ours. For example, we recently moved into this beautiful new office building. We believe that if you mean it from your heart, you should also show it in your own working environment. Hence, with all the choices we have been thinking, is this the most responsible and is this the most healthy choice for our own employees?

ALL COMPONENTS IN THE INTERIOR OF VITAM ARE CIRCULAR OR RECYCLED

As a designer, I feel it is a moral obligation to design sustainably. This is also the reason why Vitam asked us to design their new office building. In the office building, every material has its own story. The wooden parts are made of Dutch poplars, trees that grow in the vicinity of Rosmalen. These have to be cut down every so often for safety reasons. All parts of the interior of Vitam are circular or recycled, such as this table top made entirely of recycled wooden planks, but also the floors are made of old fishing nets and marmoleum made with cocoa beans. The workstations themselves are made from cellulose waste. This is #GREENGRIDZ, a lightweight furniture construction panel with a GRID, giving it strength.

WORKING VITALLY AND TRANSPARENTLY IS A COMMON THREAD AT VITAM

This translates to the food and drink in the company restaurants, where the food is prepared with the most healthy and sustainable ingredients and all prepared by our own chefs.

OUR FLAVORS COME FROM THE LARGEST PRODUCTION FOOD FOREST IN THE NETHERLANDS

We are also a proud partner of the largest production food forest in the Netherlands, with a whopping 20 acres. This production food forest respects nature and provides beautiful, special unique flavors that all come from the Netherlands. As you can imagine, this is going to be a playground for our chefs and a test forest for our lunch guests,

The PawPaw, a tree originally from America, makes very tasty bean-shaped fruits that taste like a banana and chocolate. A fantastic challenge for Vitam's chef. A footloose forest is a productive ecosystem designed along the lines of a natural forest.

The food forest takes a while before it starts producing significant amounts of food. It takes about five or six years. The products are not only tasty, they are also extremely healthy. That is why we are very happy with the cooperation with Vitam. They can deliver the products from our food forest to their customers.

WHAT YOU SHOULD NOT DO IS THROW AWAY THE LETTUCE FROM THE CAULIFLOWER

Cauliflower soup is on the menu today and what you should not do is throw away the lettuce of the cauliflower, but this you should use when you make a cauliflower soup, because there is often more cauliflower flavor to it than the cauliflower itself.What we are going to add to this is an onion and a little garlic, which we are going to slowly turn on the stove.

KOHLRABI IS A BIT OF A FORGOTTEN VEGETABLE

Kohlrabi is actually a bit of a forgotten vegetable, and that's a real shame. Kohlrabi is not only incredibly delicious as a hot vegetable, but also in a salad bar. Kohlrabi has the property of having a kind of fresh spicy flavor. It also looks a bit like radish and the leaves of kohlrabi, which is the nice thing about this vegetable, you can really use for a pesto. So we also use the whole vegetable for a change. Little bit of old cheese in it. I make this flavor with basil oil super nice. What's more fun than eating the whole vegetable. I'm going to make a salad flavored with the leaf of a kohlrabi. That's really delicious, eat this.
